Cinnamon Crisps Recipe

In Short-Straw Bride by Karen Witemeyer, Meredith makes cinnamon crisps for her family. Today, I am sharing this recipe with you.

For the pie crust:
1 ¼ cups flour
¼ teaspoon salt
½ cup shortening, chilled
3 tablespoons ice water

For the topping:
2 tablespoons melted butter
½ cup sugar
1 tablespoon cinnamon

Start by whisking the flour and salt in a medium bowl. Cut in the cold shortening until the mixture resembles coarse crumbs.

Drizzle 2-3 tablespoons ice water over the mixture. Toss with a fork to moisten, and add more water until the dough comes together. It should look like this:

Gently gather dough into a ball. Wrap in plastic wrap and chill for 30 minutes before rolling out.

Roll out dough and cut into strips.

Mix cinnamon and sugar. Brush dough with melted butter, then sprinkle with cinnamon sugar.  It should look something like this:

Bake at 350°F for about 20 minutes.  And when they are done, they should look like this:

And then you are done!  Such a simple recipe for a delicious treat.  They are perfect when paired with a hot cup of coffee!
